A memory of empathy begets empathy in the present.

1/4 cup extra-virgin olive oil
1 Spanish onion, diced
4 cloves garlic, crushed
3 tablespoons chopped fresh thyme or 1 tablespoon dried thyme
1/2 medium carrot, finely grated
2 28 ounce cans of peeled whole tomatoes, crushed by hand, juices reserved
Black Pepper
Salt of the Sea

Close your eyes. Imagine being held. Arms familiar or unfamiliar. Sink into them. Feel the breath in your chest. Open your eyes. In a 3 quart saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and light golden brown. Add the thyme and carrot. Cook until the carrot is quite soft. Add the tomatoes and juice. Contemplate the color red as you bring to a boil. Stir often. Lower the heat and simmer for 30 minutes until as thick as hot cereal.
Now that the crushing, chopping and stirring is done close your eyes and inhale. Imagine holding. A body familiar or unfamiliar. Feel this body’s heartbeat in your own. Open your eyes.

Serve over pasta or call your mothers.
